- 4 ripe pears(Bartlett or Bosc)
- 1 750ml bottle of red wine
- 2 cups water
- 1 cinnamon stick
- 4 pink peppercorns
- 1 cup of sugar
- 1 teaspoon of vanilla
1.) Peel and core pears.
2.) In a non reactive pot, add all ingredients and pears.
3.) Bring to a boil reduce heat to a simmer.
4.) Let simmer for about an hour until tender.
5.) Remove from liquid and let cool.
Poached pears can be used for many things. You can cool them down and add them to a salad for lunch, you can slice them and pass them after dinner with chocolate and fresh fruit and a glass of pinot noir. Or you can blend them along with the reduced cooking liquid and turned into sorbet to cleanse the pallet at a dinner party.
1.) Reduce liquid to a light syrup.
2.) Strain out peppercorns and cinnamon stick.
3.) In a blender, blend together pears and liquid.
4.) Freeze pear mixture in ice cream maker to factory specifications.
