S’mores Whoopie Pies

Marshmallow Butter Cream:

1 ½ cups fluff
1 cup powdered sugar
1T vanilla
1 ¼ cup shorting


½ cup butter room temperature
1 cup light brown sugar packed
1 ¼ cups flour
1 ½ cup finely crushed graham crackers
1 ½ tsp baking powder
2 eggs
½ cup plus 2 Tbsp milk
1 tsp baking soda
1 tsp white vinegar
2 tsp vanilla
6 Hershey Bars


  1. Preheat oven to 375 degrees
  2. Line baking sheets with parchment paper
  3. Combine graham crackers crumbs, flour and baking powder in a bowl, set aside
  4. In a small bowl stir milk, vanilla, baking soda and vinegar together set aside
  5. Beat together butter and brown sugar
  6. Add eggs one at a time and mix until combined
  7. Add in flour mixture to egg mixture
  8. Drop by heaping tablespoon onto lined baking sheets
  9. Bake for 8-10  minutes
  10. Let cook when done
  11. Melt chocolate in microwave
  12. On one cookie spread marshmallow on the other spread melted chocolate and enjoy!
